This is the recipe I followed for cookies (with a few tweaks). Can't find the conversion in grams - took some research (to follow) - but luckily I have a set of American measures myself. Change temp/cooking time for fan-assisted oven etc. Personally I like mine chewy so had temp a little higher and tome a little less - cook in small batches until you find the method that suits you -
Cookie Recipe
Ingredients – makes about a lot of cookies
2 ¼ Cups All-Purpose (Plain) Flour
1 tsp Baking Soda
1 tsp Salt
1 Cup (2 sticks) Softened Butter
¾ Cup Granulated Sugar
¾ Cup Packed Brown Sugar (muscovado - soft)
1 tsp Vanilla Extract
2 Large Eggs
2 Cups Chocolate Pieces
1 Cup Chopped Nuts
Method
Pre-heat oven to 375°F
Combine flour, baking soda and salt in a small bowl. Beat butter, sugars and vanilla extract in large bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate pieces and nuts (if using). Drop rounded tablespoonfuls of mixture onto ungreased baking tray.
Bake for 9-11 minutes or until golden brown. Cool on baking tray for 2 minutes; remove to wire trays to cool completely.
Try substituting some golden syrup (or whatever similarin your local district) for some of the sugars for a different taste/texture

Sounds simple enough I will give them a try on the weekend and let you know how the go. I might chop almonds, macadamia, cashews for the nut because they are my favorite ones

Good idea - always go for what you want. Am going to try a 'Rocky Road' version myself next time - some cocoa to replace some of the flour, marshmallows and hazlenuts!
Another good use (think I may have mentioned before)- bake a large, flat one, put it on a dish and serve with good french vanilla or italian style ice cream - good enough to share (or guiltily scoff alone!)
